Welcher is used to ask about one single thing from a set of similar things. It indicates choice.
Was für ein is used to ask about the quality of a person or thing.

Exclamations
The pronoun welcher -as well as the pronoun was für ein- can also be used as exclamations. In this case, the non-inflected type welch is often used.
